Ingredients
Idiyappam Rice flour - 2 cups
Water - 3 cups (approx)
Grated coconut ( garnishing )
Salt to taste
A dash of oil
Method
· First boil water by adding salt.
· Then add the boiled water to the rice flour little by little and mix it well using a spoon till it become a soft and smooth dough. ( you may reduce or increase the water and not necessary that you have to add 3 cups of water to the rice flour, so just start adding water little by little while mixing it till we get a soft dough. )
· Then grease the idiyappam or idli moulds with little oil and then take a small amount of dough and pass it in the Idiyappam maker in a circular motion. Sprinkle little grated coconut on top of the idiyappam.
· Keep the idili moulds in a Idili cooker or the idiyappam moulds to a normal cooker and steam for around 10-15 minutes.
Potato stew
Boiled Potatoes – 2 nos. crushed
Green Chillies – 4 to 6 to your level of spice
Ginger – 1 inch
Curry leaves – 2 sprigs
Onion – 1 no. big size finely sliced
Salt to your taste
Coconut oil – 1 tsp
Coconut milk – 2 cups from one fresh coconut
Water – 1 ½ cup
Method
· In a pot add water, the onion, potato, green chillies, ginger and cook it well with salt
· Add coconut milk
· Add curry leaves and coconut milk in the end
I served this with potato stew. Alternatively it goes very well with some good chicken curry or chutney or for that matter even with sugar and coconut milk it tastes great.
My aunt used to make these idiyappams not with instant rice powder, she used to grind and then make them so fresh and yummy it used to be.
