I have had the best of the Chinese starter -‘Drums Of Heaven (DoH)’ guess where - ‘Rice Bowl’ Chinese restaurant in Bangalore, Brigade road and the drums of heaven he used to give would be amazing, just melt in the mouth like. The batter coated in the chicken drums would be so crisp and soft and would taste fantastic with chillie and tomato sauce. Now rice bowl has moved to Lavelle road but never get those yummy drums of heaven. He makes so thick and the batter coated is too much.
I have had many times and cannot forget the yummy Doh and here’s the recipe!! It’s a perfect starter when served hot.
To make the best crunchy and yummy DoH the oil should be hot and the batter mix should be very cold to get the proper starter.
Ingredients:
Chicken Drums : 500 gms Tempura powder readily available in any supermarkets Ginger and garlic paste – ½ tsp White pepper – ½ tsp Salt to taste Ice cubes – half tray Chilled water – as much as you need for making the batter Oil for deep frying lime juice of one big lime
Method:
First lets marinate the chicken drums. Add ginger, lime juice, garlic paste, w.pepper and salt and let this get marinated for about couple of hours.
Keep in mind we will make the batter just before frying the drums and do not make the batter earlier.
Once the drums is marinated. We will make the batter, keep the ice cubes under the bowl and put the tempura powder in the bowl and use ice cold water to make the batter like how we make for bajji.
Take a marinated drums coat well the drums into the tempura batter and slip them into the oil and fry well till golden. They will turn out so crispy and golden.
Serve this with ketchup or chilli sauce J
