If
you are a garlic lover then you will love this simple and very delicious noodles. You wont find any
vegetables in this stir fried noodles because they are meant to accompany a
sauce based main dish.
Very
few ingredients in this noodle yet very yummy. Drizzle the soy sauce from the
sides of the wok, so that the aroma will be released and enhances the flavor
into the needles. Increase or decrease in the chilli flakes to your level of
taste.
This is one of my daughters favorite
noodles.
Serves : 3 pax Time : 30 minutes Recipe source : Nita Mehta’s cook book

Oil – 3 tbsp *
Crushed garlic – 2 tsp
Whole red chillies broken into bits – 3 nos
Red chilli flakes – ½ tsp
Sesame seeds – 1 tbsp
Soya Sauce – 1 tsp
*I
used sesame oil
Method
Add
10 cups of water and 1 tsp of oil to it. Add in the noodles and let it boil.
Stir here and there with a fork. Cook till just done say less than 5 minutes. Please do not over cook
the noodles.
Remove
from heat, strain and move the strainer
under the cold running water and let the
water drain off completely at this time drizzle
1 tsp of oil and just toss the strainer so that the noodles don’t stick
to each other and keep this aside.
Heat
2 tbsp of oil in a wok, throw in the garlic and stir.
Reduce
the flame and add in the broken chilli and red chilli flakes.
Now
add the cooked noodles and toss them well.
Add in the soya sauce and mix well so that the noodles are coated well
with the sauce.
Keep
the noodles till it turns into a nice light brown colour add the sesame seeds
mix well using forks.
Serve
it hot. It does not taste good when cold.
I
personally felt you just don’t need anything to accompany this at all.
