Chocolate Date Cake

 
 

I love adding dates to the cakes reason being it gives such lovely color to the cake and found this recipe so good with chocolate. The outcome of the came was so fudgy, moist and lovely.  A scoop of vanilla ice cream  or whipped cream to be served with will be good combi.





Bake~ 40  to 45 mints
Serves ~ 12

Ingredients:
1 cup whole pitted dates, coarsely chopped.
½ cup butter
1 cup sugar
1 tsp baking soda
1 large egg, lightly beaten
1 tsp vanilla extract
1 ½ cups flour
¼  cup unsweetened cocoa powder
½  tsp salt
1 cup semisweet chocolate chips
½  cup chopped walnuts (optional) – I have not used as I wanted it chocolaty
Whipped cream or vanilla ice cream to serve


 











Method:
Preheat oven to 350°F / 180°C.
In a medium saucepan, bring dates and 1 cup water to a boil over medium heat. Remove from heat.

Add butter and sugar and stir until sugar is dissolved and butter is melted, 2 to 3 minutes. Stir in baking sod until dissolved.
Blend in egg and vanilla and pour into the butter n date mix.


 Sift together flour, Cocoa powder and salt and then stir in to the date mixture along with 1/2 cup chocolate chips and the walnuts.
Turn into a well-greased 13 x 9inch baking pan. Sprinkle remaining 1/2 cup chocolate chips over top.
Bake until a cake tester inserted in center of cake comes out barely clean. Let cool completely on a wire rack.

Serve with whipped cream or ice cream.
