I had so much oranges in my fridge, was wondering to make, thought I will make some squash then realised that I had to make this as my hubby loves this and he insisted making this for him over the weekend. I made this with wheat flour and eliminated using APF. This super spongy cake goes well as tea time snack, You can reduce the sugar if you like, I felt 4 tbsp was needed, depending on your orange juice, if its sour then add more sugar, more or less of sugar wont harm the texture of your cake.
As I bake the aroma of the orange was filled in the entire house and I love this smell.
Ingredients:
1 ¼ cup APF or wheat flour or use 50:50
½ can of Condensed Milk
½ cup soft butter means room temperature
½ cup Orange juice - use fresh juice
1 tsp Baking powder
½ tsp baking soda
½ tsp Orange Zest

1 tsp Vanilla essence
1 tsp Apple cider vinegar

Method:
Preheat the Oven @ 180 deg for 10 minutes and grease a 8 inch square tin with butter and prepare your tin for baking.
Sift the flour with baking powder and baking soda into a bowl and keep it aside.
In another bowl mix well with a hand whisker butter, condensed milk ,orange juice, powdered sugar, vanilla essence and apple cider vinegar until everything is mixed well. No need to beat just a hand whisk will do.
Add the dry ingredients slowly into the wet ingredients and gently mix the mixture until you get a smooth and uniform mixture without lumps. Add orange zest to it and mix well.
Pour the mixture into the greased tin and tap it twice to remove the air bubbles formed if any. Put this into an oven and bake it for 35-40 mins until tooth pick comes out clean when inserted into it. Its upto your oven the time taken may be less or even more so wait and cook until the tooth pick comes out clean.
Cool on the wire rack and cut to your desired shapes.

DeleteWithout the Apple cider vinegar will it be okay ? will it make a big difference ?
ReplyDeleteIf you dont have a apple cider vinegar, try using the regular white vinegar as this will give good softness to the cake.
