Chicken Curry (My amma’s recipe)

This curry takes me to my childhood days, non-veg especially chicken was prepared most probably only on Sunday, no one is fussy to have lunch  this day as we know mom would prepare this chicken curry. Its spicy and yummy, everyone loved it. My mom is a wonderful cook,  some of her recipes  are too good, especially the non veg. Infact  I shall share all the recipes here slowly. 


When my mom visits us here  the first request from my hubby and my daughter is to make this  world class chicken curry.  I have adapted this recipe from my mom and tried making here so that I can share it with you guys. I tell you its never upto the mark to mom’s way of making this dish, probably that’s the magic touch of a mother’s love. I miss her cooking so much……L

Vanilla Cake with choco frosting - Eggless

Ingredients:

For the Vanilla cake:

225 gm plain flour
2 tsp baking powder
1 tsp baking soda
1 tin/395gm sweetened condensed milk
110 gm butter
200 ml milk
4 tbsp yogurt
2 tsp good quality vanilla extract



For the  Frosting:
80 ml   cocoa powder
80 ml   room temperature  butter
2 cups  powdered sugar
1 ½ tsp vanilla
1 to 2 tbsp hot water

Mango Frozen Yogurt

Before the mango season gets over, lets try and use the fruit to its  maximum.

This recipe is so simple and a sinful treat, just  worth the little effort that you have to put into making it. Everyone will enjoy this and you dont need to have an ice-cream maker. Just follow the instructions.



Ingredients:
1 Cup of  yogurt
½ cup of milk
5 tablespoons of sugar (or to your taste)
2 mangos, peeled and diced
3 ½ tablespoons of honey
Pinch of salt (optional)


Preparation:

Place all  the ingredients in a blender and blend until smooth. About two minutes.
Place the mango yogurt mixture in a bowl that is safe enough to go in the freezer.
Place the bowl of mango yogurt mixture in the freezer, cover it, and set your timer to 45 minutes.
After 45 minutes into freezing whisk vigorously (be sure to whisk the mixture and not use a fork) 1 hour and 15 minutes into the freezing, whisk vigorously (again) and then do the same thing 1 hour and 45 minutes into freezing.
Allow the mixture to freeze.

After the mixture has frozen, scoop some of the Mango Frozen Yogurt out, place it in a couple of bowls, and top it with some crushed pistachios (topping it with pistachios is optional, but it does make a great addition to Mango Frozen Yogurt).

Chicken dry


Ingredients


Chicken  – 500gms
Green chilli - as per you taste - we are not adding red chillie so add up as much spicy u need
Coriander leaves - about 1/2 cup
Corainder powder - 1/2tsp.
Salt – as per your taste
Lemon juice about 1/2 lime
Ginger  - one small piece
Garlic about - 5 pearls
Garam masala  1/4tsp
Onion - one


Method

·        Clean the chicken with turmeric and keep aside 
·        Crush coriander leaves, ginger, garlic, creen chillie 
·        Mix the crushed masala to the chicken. Now add coriander powder,  lime and salt and let this marinate for 30 minutes.
·        Take a kadai, pour some oil, add garam masala then saute the onion well. Now add the marinated chicken and cover and cook it well, you may add very little of water, keep in mind we are making it as a dry version.

Serve this with lemon wedges.

Channa (Salad)


Ingredients


Chick peas -  (kabuli channa) – 1 cup soaked well and then cooked
Chilli powder - 1/4 tsp
Greenc chilli - 2 finely chopped
Onion – 1 big size finely chopped
Tomatoes – half chopped same like the onion
Chat masala - 1/4 tsp
Salt – to taste
Boiled and cubed potato - 1 small
Coriander leaves - chopped - 1 tbsp




Method

Mix all the above ingredients well  to the channa. Infact add the tomatoes in the last only.  Put it in the refrigerator and serve it cold.

Surki (pickled onion)

I had this wonderful pickled onion at Bangalore Empire, oh I just loved it and relished every bit of the onion. It was  so crunchy and tasted  so good. After several failures I got the hang of  making this. I love the food at Bangalore Empire,  their chicken 65/ kebab is amazing and worth a try, I will be soon posting the recipe for the chicken 65/kebab here.


In the meanwhile go ahead and enjoy making this :

Ingredients

Big Onions – 3 medium
Green chillies – 3nos (if u need spicy add up more)
Salt – to taste
Vinegar – 3 Tbsp
Tomato – ½

Method
·        Slice the onions thinly,  chop the green chillies and tomatoes
·        Add in vinegar and salt and mix  the onions well. Ensure not to squeeze the tomatoes.

Leave it in the refrigerator and use it with  ghee rice & with any Indian breads to accompany any non vegetarian dish.

Yummy and mouth watering yet another simple dish. I am sure you will love this.


PS: As it stays longer the onions will develop a pink colour – its absolutely divine and nothing to worry. Enjoy having it.

Ghee rice (Nei choor)

Yet another simple and easy dish, everyone can make it very easily. Not much time consuming or neither too many ingredients needed.  



Jeera chamba rice or jeerkashala rice it is known, the outcome of this recipe is only  fantastic with this rice. Infact this rice has a aroma unlike how the basmati has. Look at the above pictures  where the rice grains are so small.



Ingredients:

Jeera chamba Rice - 1 cup 
Cloves 3pcs, green cardamom – 2pcs
Salt – to taste
Ghee or oil
Lime juice of half small lime  
Bay leaf – 1 no

Method

·        Soak the rice for 30minutes and then drain and keep it aside
·        Add oil/ghee (originally to this recipe they add ghee but I don’t like ghee so I add oil) to the pan, garam masala  to pop up
·        Add the soaked rice, keep the stove on sim and then fry the rice for 5 minutes.
·        Add 1:2 ratio (one cup rice means 2 cups water), add salt, bay leaf  and lime juice and allow it boil
·        Put it in dham or your rice cooker
·        Cook well until the rice is cooked completelyl

This rice goes very well with the Mutton curry (recipe in my blog) and surki ((recipe in my blog). Believe me this is just yummy and one of the best combi to try out. My family just love this combi.

Mutton Curry


Ingredients

Mutton – washed and cleaned with turmeric – 500gms
Big Onions – 2 medium
Green chillies – 2nos
Vinegar – 1 tbsp
Cumin seeds – ½ tsp
Red chilli powder – as per your taste
Coriander powder – 2 tbsp
Garlic  paste– 1 tbsp
Peper powder – ¼ tsp
Garam masala – ½ tsp
Ginger  paste – 1 tbsp
Tomatoes – 1 big size
Turmeric  - 1/4tsp
Salt – to taste
Coconut milk powder – 4 tbsp
Oil – about 2 tbsp (coconut oil or any cooking oil u prefer)
Coriander and curry leave – 2 strings each

Watermelon (Pinky…..Juice)

Who doesn’t like this pinky fruit. As we reach summer this is best time to enjoy this lovely thick fleshy pinky fruit, the real  thirst quencher which  is fully packed with some of the most important antioxidants in nature. This fruit is an excellent source  of vitamin A, B and C. Watermelon and green tea team up to prevent prostate cancer too.

Bhatura


Ingredients

Serves 2

Refined flour (Maida) – 2  ½ cups
Baking powder – ½ tsp
Soda Bi-Corbonate – a pinch
Salt – 1 tsp
Sugar – 2 tsp
Yogurt – ½ cup
Oil – 2tbsp for dough making
Oil for frying

Method

·        Sieve together all the dry ingredients and keep aside
·        Mix yogurt and sugar, add this to the flour mix and make a soft dough. You need about a cup of water
·        Now add the oil to the dough  and  cover the dough with a damp cloth. Keep atleast for an hour.
·        Now divide the dough into 16 balls and keep them to ferment for another 10 minutes.
·        Roll them round or oval shape
·        Fry them in oil and take it out.

Serve the Bhatura  with onion and lime wedges along with channa masala (recipe at veg. gravy)

Ingredients

Serves 3

Channa Masala powder (Shan masala) - 2 Tbsp
Tomatoes – 1 big size
Turmeric  - 1/4tsp
Salt – to taste
Cream – 1 tbsp
Green chillies - 3
Coriander for garnish
Kasturi methi leaves – dried – ¼ tsp
Oil – about 2 tbsp

Mango Ice Sticks

Old, young or a tiny toddler…..everyone loves to enjoy  this ice stick irrespective of their age. It takes my memory down to my school days how we used to long  for the arrival of the ice stick seller, who would come in a bicycle.  I would choose bright colours as it would give colour to my lips and it’s a kind of  thrill to eat these flavored ice sticks.  Ice sticks are my favorites even now. They are in different flavours, since we are  amidst the mango season, I have used mango, you can create variations with different seasonal fruits and enjoy this. Fizzy Mango Minty Ice stick.

Pomegranate & Orange Juice

 

Its so bright and sunny  outside. Summer is here  and  the heat is up….,  the temperature soars upto 48 deg some days, with 100% humidity.  However given a choice I  like summer and I dread  winter as I tend to catch up more flu during winters, so I hate winters.  


As summer starts,  a kind of relief comes in as schools are closed for almost two months  and time to go home  on annual leave which  I look forward to escape the summer.

Checkerboard Cake (My 1st Post)

This post is very dear to me cause of two main reasons, first being this is the first post for my blog. Second  being  a week ago was  my birthday and this cake I had baked for myself, what a way to start my blog right !!



This birthday was something to remember. Unlike other birthday’s which are showered with gifts & parties. But this birthday was not so special for me as it could have been the reason that my daughter  (she is my bundle of joy……and a grown up teenager) was away from me. So me n my hubby celebrated with a small dinner at home. Hence we baked  this cake to make my day a bit special. My hubby helped me on the major part of the cake baking (especially the cake beating part was taken care by him).

It was an amazing cake, so soft with a spongy texture of the chocolate and vanilla, moist with the sugar syrup, very easy to make provided some good exercise to the hands as the egg beating takes some time and that is the most important aspect which makes the cake so good.
