Vada Pav

One of the best Indian version of the burger. Try this out, you all will love it.

Ingredients for the vada:

4-5 boiled potatoes
1  Onion finely chopped
5-6 green chillies (upto your level of spice)
2 cloves garlic
1 inch ginger
5-6 curry leaves
1 tsp mustard seeds
1 tsp cumin seeds
A pinch of asafetida
1 tsp turmeric
1 ½  cups besan flour
2 tsp red chilli powder
½ tsp sodium bicarb
Water as required for the batter
Salt
Oil for Frying

Method :

1)  Boil the potatoes and mash them and keep aside  

2) Grind garlic, ginger and green chillies to a paste
3) Heat 2 tbsp oil in a pan, add curry leaves, mustard seeds, cumin seeds and asafetida.
4) When mustard seeds start spluttering, add the paste and sauté for 30 sec
5) Now add onion and fry till it turns brown
6) Add turmeric and mashed potatoes and mix well, add salt as desired. Cover it  so that it gets cooked  for 5-7 mins and then leave it aside to cool
7) When mixture cools, make small balls and flatten them a bit and keep


·     We are going to make the batter. In a bowl put the besan flour, salt, soda bicarb, red chilli powder, turmeric and salt and make a thick batter

·        In the meanwhile heat oil in a kadai. Take one potato ball  and dip that into the  batter and slide in hot oil

·        Keep the gas  flame in medium and fry until golden all the sides.

·        Drain it on a paper napkin.


Lets assemble the pav baji
·        Use a pav bread (store bought), slit them into half and you can apply a bit of butter and keep it on a kadai to get the roasted effect. I did not do this, I just applied the  green chutney on one side and the other side  with   sweet chutney.
·        Keep the potato ball  in the pav and add  in some  Shengdana chutney powder. Its ready to eat
·        Don’t wait  just grab and enjoy the vada pav hot hot.

As I take a bite of the vada pav, the spicy shengdana chutney powder releases the aroma of the peanut and goes well with the green and the sweet chutney.  Normally they serve this with fried salted  green chillies.  If you like you may add that too J

Shengdana Chutney

Ingredients:

100 gm peanuts, roasted and deskinned
3-4 tsp red chilli powder
2 tsp cumin seeds, roasted
1 tbsp sesame seeds, roasted (optional)
Salt to taste

Method:

·         Place peanuts in a blender and add chilli powder, roasted cumin and sesame seeds to it

·        Blend to a coarse powder, add salt and mix well

 

Green chutney

Ingredients

Coriander leaves : 1 cup     Mint leaves : ½ cup                                                                                        Green chillies – 4 – 5 nos (upto your spice level)               
Lime juice – ½ tsp
Cumin seeds ½  tsp
Salt to taste

Grind the above to fine paste and the green chutney is ready to use.

Sweet chutney

Ingredients

Dates : 12nos (soaked in water for 10 minutes)                                                                                       Cumin seeds ½  tsp
Red Chillie powder – ½ tsp (or your level of spice)                                                                                     Jaggery – 1 tbsp                                                                                                                                                Tamirnd : 1 tsp or half the size of a  small lime

Grind the above to fine paste and the sweet chutney is ready to use.
