Stuffed Mushrooms

I love this stuffed mushrooms as its so  yummy and so delicious,  I am sure you all will love this too.

Fresh White button mushrooms  -  10 – 15nos
Finely chopped onion  1 big size
Very finely chopped green chillies – 1
Ginger  squeezed – 1 inch
Grated garlic  – 2 pods
dried or fresh rosemary – ¼ tsp  OR mixed Italian herbs is fine
Salt and chilli powder to  your level of taste
Bread crumbs – About ¼  cup
Chees (optional)                                                                                                                                           Cashew cream ( grounded) – 2 tsp.
Oil – 1 tsp.
       -     Clean the mushrooms thoroughly and remove the stem carefully by retaining the caps.
-         Chop very finely the stems.

-         Heat oil in a pan, add the onions, green chillies, garlic, ginger and a little salt.  Saute a minute or so and chopped mushroom stems. Saute till the mushrooms water and the mixture is dry, add the herb and mix. You can smell the aroma of the herbs so nice and I am loving it so much.  Keep it aside and let this stuffing become cold.
-         Fill a little of the stuffing into each cap, and top with a drop of the cashew cream using a brush. Spread it and seal the hollow and (optional) top it with cheese and then top with some bread crumbs.

Pre-heat oven on grill mode for 10 minutes in the highest temperature. Let the mushrooms get grilled till the crumbs turn a light brown, or the cheese melts, and the mushrooms start developing streaks of brown. The first batch takes about 5-10minutes.

So tempting it  was that as they were out of the ovens I grabbed one and started to enjoy it.  Really it was so yummy and a perfect starter for a party. Do not prepare this earlier and keep. Just keep everything ready and when you are ready to dine just grill as it does not take too long to get grilled.
Serve with pudhina  chutney or sauces that you love.
