Celebration with Black Forest Cake

Today is the 4th day of Atham and I ensure that I put ‘Athhapoov’ at my home all the 10 days, it’s a kind of thrill that Onam is on the way. This is the ‘Atthapoov’ I put today.
This is the cake I baked last evening to celebrate 20th wedding anniversary.

Eggs-6 nos.
Powdered sugar -150gms
Cocoa-3 tbsp
Cornflour-2 tbsp
Baking powder-1 tsp
Salt- a pinch
Vanilla essence-1 tsp


* Pre heat oven to 190 C, reduce to 180 C 10 minutes after the cake is put in.
* Sift flour, cocoa, baking powder, salt, cornflour thrice.
* Beat eggs & sugar well with a beater till very thick ribbon approx 10 mins
* Add essence & beat for a minute.
* Gently fold in the sifted flour, mix lightly and bake for 30-35 mins till done.
* Once done, remove from tin after 5 minutes and leave on a rack to cool completely.                                      * Cut into 2 - 3 layers, I did 3 layers.

Whipping cream-400 ml ( reserve half for the outside)
Powdered sugar- 3 tbsp                       
Cherries- 150 g  (reserve few for garnishing)
Sugar – 4  tbsp
Water-  1 ½  cup
Rum- 1-2 tbsp ( I did not use)

* Whip the cream to peaks using 3 tbsp sugar. Keep  half for the outside.
* Boil water, add sugar& cherries and let it cook for 6-7 mins, let it cool and now add the rum if u r using.
* Drain the cherries and keep the syrup as we will use to moist the Gateau.
* Keep  few  whole cherries for garnishing and slice if you need the remaining. The cherries I had was small so I put them in whole.

Lets assemble the cake:

-         Place the first layer of cake in the plate you wish to serve, moist the cake  with the syrup.
-         Spread a thin layer of cream (I piped it avoid the mess.)  and sprinkle few sliced cherries on it. 
-         Continue this process till the last layer is done.
-         Finally spread the remaining cream on top and on sides.
-         Grate chocolate and arrange with cherries and decorate the cake as  you wish.

Let the cake be inside the fridge for sometime as its best to have when chill.
