This is one dish which does not need any cooking, all you have to do is  mix and match recipes with raw vegetables/lentils, very  healthy and easy to make.

½ cup yellow moong daal
2  tsp grated coconut
¼ cup grated carrot
½ cup grated cucumber
1 tsplemon juice
3-4 green chilies
2 sprigs of  coriander leaves
A pinch asafetida
½ tsp oil

Soak daal for around one hour. Clean and discard the water and add carrot, cucumber, coconut, slit green chilies to it. Add salt, lemon juice, chopped coriander leaves and mix well.
Heat oil and add mustard seeds. When they start popping, add curry leaves, asafetida and red chili broken into pieces. Mix well.
