Ingredients:
¾ cup butter
2 tsp vanilla
½ tbsp baking powder
3 eggs at room temperature
½ tsp salt
1 cup sugar
250 gms semisweet chocolate chips
90gms - unsweetened chocolate, chopped
½ cup flour
2 cups chopped Oreo cookies aprox. 20 cookies

Method:
Arrange a rack in the middle of the oven and preheat to 350°F. Line and butter an 8" x 8" baking pan.
In a heatproof medium bowl set over a saucepan of simmering water, heat butter, chocolate chips and unsweetened chocolate until melted and smooth. Allow to cool down for 5 minutes.
In a large bowl, whisk eggs, vanilla and sugar. Blend chocolate mixture into egg mixture; cool to room temperature.
In a medium bowl, sift together the flour, baking powder and salt. Add flour mixture to chocolate mixture. Stir in half of Oreo cookies into chocolate mixture.
Pour batter into baking pan and smooth top with a rubber spatula. Sprinkle the rest of the Oreo on top. Press it into the batter lightly.
Bake 40 to 50 minutes or until a toothpick inserted into the center comes out clean, please do not over bake the brownie and have an eye on your brownie as the temperature varies from oven to oven. Allow to cool completely before cutting it into square.
