Recently I saw on
a TV show a chef doing this smoky effect
using a charcoal for a dish he had made.
I used the typical Kerala masala
for the chicken and gave the smoky
effect. We
at home loved it and it’s a wonderful starter. Needs very few simple
ingredients and very easy to make.
If you have charcoal fine otherwise don’t worry, just use
the shell of a coconut and give the smoky effect. I
broke a piece of the coconut shell and burnt it well on the flame and
put it in a small steel container and put some butter and topped it with cloves
and put it into the cooked chicken and I
closed the lid to get the smoky effect.

Boneless chicken cubes – 400gms
Curry leaves – ¼ cup (be
generous)
Onion – 1 medium fine chopped
Turmeric powder – a generous
pinch
Red chilli powder – 1 tsp
Green chilli slit – 3 nos.
Garam masala powder – ¼ tsp
Ginger and garlic paste – 1 tsp
Oil – 3 tbsp
Pepper powder - 1/4 tsp
Lime juice of one lime
Salt – to taste
Coconut grated – ¼ cup
Cloves – 3 nos.
Garnish with coriander leaves
Butter – a few drops
Method:
Clean and wash the chicken and keep aside
Add the red chilli, lime juice, turmeric, garam masala,
salt and let this get marinated for about
one hour atleast
Add oil in a pan, throw in the curry leaves
fry well and keep this aside
To the same pan add the onion, green chilli
and fry well till light golden, add in the ginger garlic paste, pepper powder and fry a minute
more. Now add in the chicken and give a good mix and close the pan with a lid
and let this cook. We are not adding water at all so have an eye on the flame
and stir here and there till the chicken is cooked well. Check salt and chilli
level, if need you can add now.
When the chicken becomes completely dry and
cooked well. Add the grated coconut and garnish the fried curry leaves on top
and give one mix.
Now place the charcoal piece as I told in the post above. Close the lid and let the
smoke get into the chicken pieces for about 15 minutes.
Yummy and delicious chicken is ready!!
