Chocolate Marble Cake - Eggless & Butterless Version


This is the second Home Baker's Challenge started by  Priya Suresh hosted by by Sangee Vijay

This month challenge was to bake  with mango and chocolate, I wanted to try it with eggless and butterless.  The cake was so soft and moist, seriously  I love the cakes to be with butter as the taste is so much different from the butterless cakes.




Makes 9' loaf cake

Ingredients
All Purpose flour   -  2 cups
Baking powder      - 1 ½ tsp
Baking Soda    ½  tsp
Salt     ¼  tsp
Sugar      ¾  cup
Cocoa Powder    ¼ cup ( mix with 2 tbsp warm water)
Oil      5 tbsp
Vanilla      1 tsp
Mango Pulp     1 cup ( i used store bought mango pulp)
Milk        ¼  cup
Buttermilk     ¼  cup







Method

Preheat oven to 350 degree Fahrenheit and Grease & line the pan with parchment paper.

In a large mixing bowl, combine sugar & oil then to this add mango pulp, milk,  vanilla, buttermilk and mix well.

In another small bowl, combine flour, baking soda, baking powder & salt mix and now add this flour mixture to the mango-milk mixture and mix until everything combine well.

Now take a small cup, add cocoa powder & 2 tsbp warm water and mix well.

Then transfer half of the mango batter to another bowl and add this cocoa paste and combine well.

Now both your mango batter & chocolate batter are ready.

Then to the lined loaf pan, add one spatula of the mango batter and then on top of that gently pour another spatula of the chocolate. You need to be very slow in pouring the batter to get the right zebra cake. Complete the entire batter pouring alternatively.

Bake it for 50-55 minutes or until done(check by inserting a knife or toothpick which should come out clean).

Notes:

This cake won't rise too much so you can fill upto ¾  of the pan

  14. Wow, you made a Zebra Cake...mayb you should rename the title of your post to Zebra cake ;-) I've been wanting to try Zebra cake ever since I saw it online. Very well done.
