How time flew by. Today is a joyous occasion in our life. Let me share this with all my co-bloggers and my well wishers. This is my daughter (Sanjna).
It’s a milestone celebrations and yes she is 18 today. Looking back the past few years, I find myself trying to conjure up memories of her first steps, first words, first day of school and now in the university and every year has been so special with such wonderful memories.
Turning from 17 to 18 is one of the major changes in life because this is the transition being an adult for many years to come in the future. We are in Goa celebrating her b’day.
Myself and hubby can never forget the indescribable joy that this amazing bundle of joy has given us every day for the last 18 years. Happy Birthday darling! May God give you good health and happiness always.
B’day girl loves Chocolate and Mascarpone. Hence I was looking for a cake or a brownie with this and I came across this Chocolate Mascarpone Brownie recipe from here .
Since I had to carry it for her to her hostel, all I could do was not add the chocolate ganache. Believe me it was a super quick and easy bake. My daughter loved the brownie so much. My only regret was that I could top it with some ganache, it would have been a yummy brownie. I have made changes to the recipe like the quantity of sugar.
For the brownies:
· 1 cup unsalted butter (plus more for preparing pan)
· 3 ounces semisweet chocolate, finely chopped
· 1 ½ cup granulated brown or white/ sugar *
· ½ cup cocoa powder
· ½ cup mascarpone cheese, softened
· 3 large eggs, at room temperature
· 2 teaspoons vanilla extract
· ½ cup all-purpose flour
· ¼ teaspoon salt
I have added brown sugar, if you are making ganache then reduce the sugar to one cup.
