Peanut Butter Cookies


This is the third Home Baker's Challenge started by Priya Suresh and hosted by Viji.

This month challenge was to bake  cookies and we were give four recipes, I loved the peanut butter cookes and have tried making. Loved the nutty, crunchy  & a flavorful cookie.

Ingredients

All purpose flour – 1 ½ Cup
Baking powder – 1 Tsp
Crunchy peanut butter – 1 ½ Cup
Packed light-brown sugar – 1 Cup
Unsalted soften butter – ½ Cup (1 Stick)
Large egg – 1






Method

Preheat oven to 350 F/175 C.

In a mixing bowl whisk together flour and baking powder, set aside.

In a large bowl, beat peanut butter, sugar and butter until smooth. Beat in egg. Gradually add flour mixture, beating to combine.

Pinch off dough by the tablespoon, roll into balls. Place 2 inches apart on parchment lined baking sheets. Using a fork, press balls in a crisscross pattern, flattening to a ½ inch thickness.

Bake cookies, rotating halfway through, until lightly golden, 18-22 minutes. Cool cookies on a wire rack. 

Enjoy this with a hot cup of coffee or  tea.

  4. Its a challenge and I have been varieties of challenging peanut butter cookies. Each one has its own strength including your version. The like the crunchy explosion and the beautiful peanut butter add on.
