Eggless Date Cake


Ingredients
Seedless dates – 18 nos.     *                     
Sugar  - ¾ cup
All purpose flour – 1 cup
Milk  - ¾ cup
Oil – ½ cup (I used sunflower oil)
Baking soda – 1 tsp 

* I soaked the dates in 1/4 cup milk for about 1 hour

Chocolate Marble Cake - Eggless & Butterless Version


This is the second Home Baker's Challenge started by  Priya Suresh hosted by by Sangee Vijay

This month challenge was to bake  with mango and chocolate, I wanted to try it with eggless and butterless.  The cake was so soft and moist, seriously  I love the cakes to be with butter as the taste is so much different from the butterless cakes.




Makes 9' loaf cake

Ingredients
All Purpose flour   -  2 cups
Baking powder      - 1 ½ tsp
Baking Soda    ½  tsp
Salt     ¼  tsp
Sugar      ¾  cup
Cocoa Powder    ¼ cup ( mix with 2 tbsp warm water)
Oil      5 tbsp
Vanilla      1 tsp
Mango Pulp     1 cup ( i used store bought mango pulp)
Milk        ¼  cup
Buttermilk     ¼  cup

Chocolate Mascarpone Cheesecake (Eggless & No Bake) for my Blog 1st Anniversary



I can’t believe it’s a year since I have been blogging. On this wonderful day of my blog anniversary I would like to thank all my fellow bloggers, followers, friends  and each one of you who has taken time to visit my space and encourage me to reach this milestone. Thank you  for all your kind support you have given  me and I hope to continue to get more.



 

I made my own mascarpone   at home to make this delicious desserts, infact I have made this several times and  my daughter loves it so much.  This time I thought of setting them in  a nice glasses rather than a  8” round shape. Its so simple and easy to make too.

 

I have topped  with chocolate  ganache, you can do the way you like.

Eggless Pineapple Cream Cake



Today is a special day as I celebrate my birthday.  I wanted to make eggless cake and thought of making this lovely soft and delicious eggless pineapple cake.

This recipe was adapted from here.  The outcome of the came was too good. In between the  layer I had added generous amount cream and  pineapple chunks and it was delicious and yummy.  We at home loved it so much.

White Bread & Dilpasand - Eggless



We had a wonderful challenge set by Swathi Iyer for Baking Partners challenge 8. Baking fresh  breads at home. Thank you Swathi for this wonderful challenge. 

I chose to use the  Asian method of Tangzhong  method to bake the bread and dilpasand.  I have added some raisins you can omit that if you want, if you like all you have to do his just soak the raisins in hot water for 10 minutes and then remove them from water when dry roll them in a tbsp. of flour and then use this in the final stage of rolling.

We are given two methods of bread making one is Asian method Tangzhong and other is Scandinavian method of Scald flour.

Homemade Pita Breads


I have never posted  more recipe from the middle eastern cuisine,  I made two types of pita one I used completely with all purpose flour and the second type I made was using half of the whole wheat flour and  all purpose flour to make it more healthy. Both were extremely soft and fluffy.


I felt more comfortable to use the stove top method to bake the pita as handling it was much easy.

Makes  : 8 to 10
Time taken: 2hrs


Ingredients
Warm water – 1 cup (not boiling hot)
Active or instant yeast – 2 tsp
All purpose flour – 2 ½ to 3 cups
Salt – 2 tsp
Olive oil  - 2 tsp


Method


Mix water, yeast together and let it sit for about 10 minutes until the yeast is well dissolved and bubbles are formed.




In a big bowl add the flour (2 ½ cup and the rest you can add whilst kneading), salt, 1tsp olive oil and mix well.  Now add the yeast mixture and  knead the dough well, keep adding the extra flour on the work area and kneed for about 10 minutes until smooth dough is formed. If the flour is left out never mind we can use it at the later stage.


In a clean bowl  brush the dough with olive oil and cover it with a wet cloth or cling film and now let this rise double the size (probably 1 or 2 hours or even more depending on your climate).




Gently deflate the dough on a lightly  floured   work area. Divide into 8 balls and flatten each balls into thick disc and cover the disc with a kitchen towel until you are ready to roll them.




Use a rolling pin and make nice small  circles of the each disc about ¼ inch thick. If you are not able to roll the dough and if its starts to spring back whilst you are rolling which means it needs some more time of resting.  After a while start rolling them back.

You can bake them at 450 deg on a baking sheet for about 3 minutes as it puffs up like  a balloon  you can get it out. You can put as many as your sheet can accommodate.





You can even make it on the stove top on a skillet. Place a rolled pita on the hot skillet and  when you see the small bubbles flip to the other side for another 2 minutes, you will get nice puffed up balloon like pita.  If it does not puff then you just press the pita gently with a clean towel  and it will puff.  Cover the cooked pitas with a clean dishtowel whilst cooking the rest of them.

Pitas are stored in an airtight bag or the best is to have it hot as they are made.

Whole Wheat Bread - Eggless



A very healthy and a simple bake.  Eggless  and  you can use any cooking oil and make this.

Makes two 9x5 loaves
Time taken: approx. 4 hrs in all

Ingredients
1 cup  warm  water
¼  cup  honey
2 tbsp  oil
2  ¾  cups  all-purpose flour, plus extra for kneading
2 ¾  cups  whole wheat flour
2 teaspoons active dry yeast
1 cup  milk
1 tbsp salt



 Method

Pour the water into the bowl  and sprinkle the yeast over top. Let this stand for a few minutes until the yeast has dissolved. Stir in the milk, honey, and oil.

Add two cups of all-purpose flour and the salt, and stir to combine the ingredients. Add the rest of the all-purpose and whole wheat flours. Stir to form a loose dough. Rest the dough for  20 minutes.
Knead the dough for 10 minutes,  add extra flour a tablespoon at a time until it is no longer sticky. The dough should be  kneaded  smooth and springs back when poked.

Make the dough into a ball and turn it in the bowl to coat it with oil. Cover the bowl and let the dough rise in a warm spot  to rise (approx  1 or 2 hours) depending on the level of heat in your  work area. This dough won't double quite  unlike the  other recipes, but the dough should look visibly puffed.
Sprinkle a little flour on the counter and turn the dough out on top. Divide the dough in two and shape each half into a loose ball. Let the balls rest for 10 minutes.

Grease two loaf pans, shape each ball of dough into a loaf. Let the loaves rise a second time  for 30-40 minutes.
Heat the oven to 425°F
Before putting this in the oven slash the tops of the loaves with a serrated knife. Turn down the heat to 375°F and bake for 30-35 minutes. 
Finished loaves will be golden-brown and sound hollow when tapped on the bottom. Remove the loaves from the pans and let them cool completely before slicing.

Tutti fruity Orange Loaf (Eggless)


I had several times baked the eggless Orange cake  as we all at home love it. I had one whole pack of the tutti fruit left  out, hence I thought of just adding to this loaf. 

It turned out to be a great  tea time snack.





Ingredients


APF – 1 ¼ cup
Condensed milk – ¾ cup
Orange juice – ¼ cup
Baking soda – ½ tsp
Baking powder – 1 ½ tsp
Butter at room temperature – 4 tbsp
Orange zest – 1 tsp
Vanilla essence – 1 tsp
Tutti fruity – as much as you want  in the batter and then on top for garnishing. *

*Tutti fruity that you are planning to mix in the  batter should be mixed with  a tsp of flour.

Eggless Blueberry Muffins Recipe - My 150th Post



I still cant imagine how the days  are passing  by.  we are reaching the year end in few days from now.  Well I had bookmarked this recipe for sometime as I  loved the blueberry and wanted to make it and I finally got an opportunity to bake them.


This is my 150th post and would like to thank one and all for your kind support in reaching this milestone.  Thank you and looking forward to all your support always.

Makes : 12 - 1 5 muffins

Ingredients:

Blueberries – 1 cup                                                      
2 tsp plain flour for coating the blueberries
1 ½ plain flour
1 tsp baking powder
1 tsp baking soda
¾ cup milk powder                                                                                                                                        ¾ cup fine sugar (you can increase if you want)
100 gm  butter, melted
250 ml milk
1 tsp vanilla extract

Cinnamon shortbread Cookies - eggless

My daughter insisted that I made some cookies for her and I wanted to bake eggless too. She kept saying why are you not posting anything for Christmas on the blog? She loves the cinnamon flavour  in the cookies. So here it goes with my first recipe for the wonderful season.

I have iced some cookies only as   its my first icing and was a bit nervous how it would turn out.  If you have kids at home give this  job to them as they will be in their best to come out with good designs.  I think when I make my ginngerman cookies – I will give it to my daughter for the icing. I have no patience to sit and ice the 40 plus cookies,  honestly I just did few and the rest I  dusted with  icing sugar. I have made many stars and some gingerman shapes and some dolls.

How I made the cute little  edible santa (I saw in many blogs and I feel for the cutie). Clean and wash the strawberry, gave a small cut on the base so that he can sit well. Gave a small cut on the upper portion of the strawberry and dropped a big chunk of the (sugar and cream cheese mix) and put the starwberry piece back  on the cream. Now on the top of strawberry put a  small dash of the cream for cap. With the edible black colour I  made two dots for the eyes J. I super loved him the most.


So upto you how you want to decorate J

Makes : 40 – 44 cookies
Ingredients

225g unsalted butter, at room temperature
100g ( ½  cup) caster sugar
225g (1  ½  cups) plain flour
120g (2/3  cup) rice flour
2 tsp ground cinnamon
Pinch of salt


Sugar icing
Icing sugar  - ½ cup
Water  - 1 tsp or just as required
Corn flour – 2 tsp
Colours – few drops of your choice
·        When you are icing the cookies please ensure it has to be chilled completely and then only ice.

Orange Eggless Cake

I had so much oranges in my fridge, was wondering to make, thought I will make some squash then realised that I had to make this as my hubby loves this and he insisted making this for him over the weekend. I made this with wheat flour and eliminated using APF. This super spongy cake goes well as tea time snack, You can reduce the sugar if you like, I felt 4 tbsp was needed, depending on your orange juice, if its sour then add more sugar, more or less of sugar wont  harm the texture of your cake.

As I bake the aroma of the orange was filled in the entire house and I love this smell.
  


Makes : 8 inch cake
Time taken : 45 minutes to bake

Ingredients:

1 ¼ cup  APF or wheat flour or use 50:50
½ can of  Condensed Milk
½  cup soft butter means room temperature
½ cup Orange juice  - use fresh juice
1 tsp Baking powder
½  tsp baking soda
½  tsp Orange Zest
4 tbsp powdered sugar
1 tsp Vanilla essence
1 tsp Apple cider vinegar

Eggless Chocolate Chip Cookies

I was hunting for an eggless chocolate cookies to make for my daughter and came across this from  here  it was so an eyecatching recipe that I tried and everyone at home super liked. The main ingredient being wheat flour, keeping in mind the health point of view I fell in love with the recipe and wanted to try this.  Thanks Radhika for the wonderful recipe.

Bake Time: 15 – 20 Minutes
Total Time: 25 Minutes
Makes: 15 Cookies
Shelf Life: 1 week



Ingredients:

  • Whole wheat flour or all purpose flour – 180 gms
  • Baking Powder – 1 tsp
  • Butter – 100 gms
  • Brown sugar – 100 gms
  • Cocoa powder – 2 tsp
  • Vanilla essence – 1 tsp
  • Chocolate Chips – 4 tbsp (divided)
  • Smarties – for decoration

Rich Choco Cake (Eggless)

Ingredients
All purpose flour – 2 cups
Baking powder -  2 tsp
Baking soda – 1 tsp
Dark chocolate - 1 ¼ cup
Water ¾ cup
Butter room temperature – ¾ cup
Caster sugar – 5 tbsp
Condensed Milk -  400gms
Vanilla – 1 tsp
Walnut or any nuts you like ¼ cup (optional)


Method

Preheat oven to 180°C.  Grease baking tin and dust flour.

Sieve flour, cocoa and baking powder in a bowl. 

In another pan add the water and chocolate and boil it so that the chocolate melts and let it cool.
In another bowl, mix or use a hand mixer and  incorporate the butter, sugar, condensed milk and add the chocolate mix. Now add the dry ingredients and let it get mixed well.
Pour this into the tin and bake in preheated oven  for about 25 minutes or a toothpick inserted into the center of the cake comes out clean. Remember each oven has their own temprature so have an eye and bake it perfectly
Cool completely and enjoy this with a scoop of vanilla ice-cream.
